If you were in Lexington before 1991, you likely remember Brooking's Restaurant on Euclid Avenue — the cozy spot where Coach Adolph Rupp had his regular booth and enjoyed the same incredible chili for two decades.
Even after Brooking's Restaurant closed in 1991, the beloved recipe lived on. John Dance purchased the original recipe from the Brooking family and dedicated years to perfecting the spice blend to recreate the exact taste that Coach Rupp cherished.

Original recipe
IT'S EASIER THAN YOU THINK!
Step 1: Separate two pounds of ground beef - DO NOT BROWN THE MEAT!
Step 2: Add 1.8 oz (1/3 cup) of Brooking's Chili Spice Mix.
Step 3: Add 1/2 cup of sweet onion, chopped very fine.
Step 4: Add 2 and 2/3 cup of warm water and mix thoroughly. Cook at medium heat for 30 minutes, stirring frequently.
Step 5: Add one 15 oz. can of Red Gold tomato puree. Cook 15 minutes, stirring frequently.
Step 6: Add one 15.5 oz. can of Joan of Arc Red Kidney Beans. Be sure to add bean juice to the mixture and stir frequently.
The chili will be ready to eat after you add the beans, but let it simmer for a while to allow the flavors to come together. Enjoy!
