In 1985, when the NCAA Final Four was in Lexington, millions of Americans saw Brooking’s when sports commentator Al McGuire did his network TV show from the restaurant.

Edward Brooking, center, celebrated his 93rd birthday Sept. 1, 1982 at his Euclid Avenue diner, Brooking’s Restaurant with Charlene Taylor and Sonny Perry. A little more than two weeks later, the “chili king” of Lexington died.
In 1991, when Brooking's Restaurant closed after 55 years, John Dance stepped in to purchase the original recipe directly from the Brooking family. He spent decades perfecting the spice blend and packaging to recreate the exact taste Coach Rupp loved. In this exclusive interview, John tells the story in his own words of how he preserved this piece of UK history and eventually passed it on to current owner Danny Collins.

What You'll Need:
2 pounds Ground Chuck (don't brown it - we'll show you why)
1 package Brooking's Chili Spice Mix (this is where the magic happens)
1/2 cup Sweet Onion, finely chopped
2 2/3 cups Warm Water
1 can (15 oz.) Tomato Puree
1 can (15.5 oz.) Red Kidney Beans (include the juice)
Simple Steps:
1. Start with the meat - Separate 2 pounds of ground chuck into small pieces. Here's the secret: Don't brown the meat first. This is part of what makes Brooking's chili unique.
2. Add the magic - Mix in your Brooking's Chili Spice Mix and finely chopped sweet onion. This is where that legendary flavor starts.
3. Add water and cook - Stir in 2 2/3 cups warm water. Mix thoroughly and cook over medium heat for 30 minutes, stirring frequently.
4. Add tomatoes - Stir in the tomato puree and cook for another 15 minutes, stirring often.
5. Finish with beans - Add the kidney beans along with their juice. Stir well and you're done!
